It must be a bittersweet experience for your family whenever you guys attempt to make tamales, but I admire your courage. It's not easy to make and I've never tried to do it at home, at least not yet :) I love it myself and whenever I visit my only surviving Aunt in Imus we always make sure to drop by the only remaining tamales maker in town. I think the difference between Ka-pampangan tamales and the one from Cavite is the topping and the proportion of peanuts and the rice. Cavite tamales is sweeter and only has eggs on top and no meat.
